Hotel food waste arrives in waves across a long operating day, and the volume is hard to predict because banqueting does not follow a weekly pattern. Fixed collection schedules deal badly with that.

Consolidating waste into a single on-site composter smooths the problem: the machine absorbs the peak into its chamber and runs its cycle overnight. CR-50 or CR-100 covers most single properties; resort complexes with several kitchens typically move to CR-200 or above.

Space is the second constraint. Back-of-house area is always contested, which is why footprint and indoor installation matter - UV and activated carbon deodorisation is what makes a machine acceptable inside a guest-facing building.
