Why food waste in landfill is a climate problem
The same organic matter behaves very differently depending on where it decomposes.
Food waste sent to landfill decomposes without oxygen, and anaerobic decomposition produces methane. Diverting organics from landfill is one of the more direct emissions reductions available to a food business or a municipality.
Landfilling organics also wastes the material itself. The nutrients in food waste are exactly what depleted soil needs, and burying them removes any chance of that transfer happening.
On-site processing addresses a third source of emissions: transport. A machine installed at the point the waste is produced eliminates the haulage step for the 85-90% of the volume that would otherwise be moved as water.
This is the argument behind decentralised composting - not that composting is novel, but that doing it aerobically, locally and quickly avoids three separate losses at once.
