Crushed flake at 40 to 60 mesh with great colour and spicy taste, for salsa and kimchi
This chili crushed with great colour and spicy taste is used for salsa, kimchi and other sauces. It is the flake grade rather than the powder grade, so the chili stays visible in the finished product.
Colour runs 100 to 220 ASTA, heat is quoted across 100 to 80,000 SHU, mesh is 40 to 60 and moisture is held at 14 percent maximum.
Key Benefits
Visible chili in the finished product
A 40 to 60 mesh flake still reads as chili in a salsa or a kimchi paste.
A heat window wide enough for mild and hot recipes
100 to 80,000 SHU, selected per lot rather than shipped as an average.
Strong colour
Quoted at 100 to 220 ASTA, the same band as our powder line.
Consistent flake size
Mesh 40 to 60 keeps the appearance of the paste steady between batches.

Problems It Solves
Powder disappears into a sauce
A 40 to 60 mesh flake stays visible.
Flake size drifts between suppliers
Mesh is specified at 40 to 60 rather than described as coarse.
Colour and heat move together
Here they are quoted separately, 100 to 220 ASTA and 100 to 80,000 SHU.
From the Field to Your Container
Pod selection sets the colour ceiling
Milling cannot add colour. The ASTA band a lot can be quoted against is decided when the pod is chosen, which is why the mill starts from graded whole pods rather than from whatever is available.
Seed and stem content set before milling
Seed percentage and stem removal are decided at this point, not corrected afterwards. Both change the apparent colour of the finished powder or flake.
Milled or cut to the specified size
Powder runs at 40, 60, 80, 100 or 120 mesh, crushed flake at 40 to 60 mesh, coarse crush at 3 to 5 mm and rings at 2 mm. The mill is set to your figure before the lot runs.
Moisture checked, then packed
Ground products are checked against their published moisture limit and packed in cartons, paper bags, woven sacks or big bags depending on how you discharge.
Quality Control and Certification
- Ground lots are checked against the mesh or cut size on the order before packing, because a mesh error cannot be corrected once the material is bagged.
- Moisture is verified against the published limit of 14% max before packing.
- Seed content is cut to the figure on your order: see crushed chili with seeds.
- Colour is confirmed inside the quoted 100-220 ASTA band against your agreed target point.
- The plant has run without a food quality or safety incident since 1999, across an annual output of 3,000 to 5,000 tons of chili products.
Use Guide
- Add late in a cooked process so the flake keeps its edge.
- Dose by weight; flake bulk density varies more than powder.
- Store sealed at 14 percent maximum moisture.
- If the paste looks too dark, move down the ASTA band rather than reducing the dose.
How This Compares With the Rest of the Range
| Alternative | What changes |
|---|---|
| Crushed Chili With Seeds | The same heat and colour bands but a coarser 3 to 5 mm cut, with seed content set at 25, 30 or 40 percent. |
| Premium Chili Powder | Milled fine at 40 to 120 mesh when the chili should not be visible. |
| Red Chili Pepper Ring | A cut ring at 2 mm rather than a flake, at a fixed 18,000 to 25,000 SHU. |
