What is the highest ASTA colour you can supply?
260 ASTA, on paprika pellet. Pods, crushed and powder grades run to 220 ASTA. Paprika as a category starts at about 70 ASTA.
Which paprika grade suits sausage production?
Powder at 60 to 80 mesh if the colour should be even, crushed if visible red flecks are part of the product identity. Most meat customers take the seedless crushed grade when they want flecks.
Why would I buy pellet rather than powder?
Only if you are extracting. Pellet is pressed to 4 to 5 mm with a hardness of 3 to 4 so it packs and flows in an extraction column instead of blinding the bed.
Can seeds be removed completely?
Yes, the crushed grade is available seedless, which gives uniformly red flecks.
