Overview

Whole low-heat pods 10 cm and up, used to season and colour rice stews soups and sausages

Paprika is a low heat chili pepper with a wide range of colours, ranging from 70 to 220 ASTA. It is principally used to season and colour rice, stews, soups and sausages.

Our pods are graded at 10 cm and up, with broken content below 3 percent and loose seeds below 2 percent, stem or stem-less. Colour is quoted at 100 to 220 ASTA and heat at 100 to 300 SHU.

Key Benefits

Buy the pod and control the grind

If you mill in house, the whole pod is the cheapest way to hit your own mesh.

Clean grading

Broken below 3 percent and loose seeds below 2 percent.

Low heat by nature

100 to 300 SHU, so the colour comes without a heat claim.

Long uniform pods

10 cm and up, which suits both milling and visible use.

Colour is described rather than measured

Quoted at 100 to 220 ASTA against a range that runs from 70 ASTA upward.

Manufacturing Process

From the Field to Your Container

  1. Grown for colour rather than heat

Paprika is picked on colour development rather than on heat, so the timing of the pick matters more than it does for a hot chili.

  2. Dried with colour protection in mind

Paprika loses ASTA faster than a hot chili does. Drying and storage are handled to protect the colour that the lot is being sold on.

  3. Formed to the grade you ordered

Pods are shipped whole, crushed with or without seed, milled at 60 to 80 mesh, or pressed into 4 to 5 mm pellet for extraction.

  4. Colour verified against your target point

The lot is checked against the point in the ASTA band you bought against last time, not against the average of the harvest.

Quality Control and Certification

  • Paprika lots are checked against the agreed point in the ASTA band rather than against the band itself, which is what makes colour repeat between shipments.
  • Broken pods are graded to below 3%.
  • Loose seed is graded to below 2%.
  • Colour is confirmed inside the quoted 100-220 ASTA band against your agreed target point.
  • Paprika has shipped from this plant without a food quality or safety incident since 1999, mainly to Japan, South Korea and the United States.

How quality is controlled

Use Guide

  • Mill in short bursts; paprika oil heats quickly and dulls the colour.
  • Remove stems before milling if you are buying the stem-on grade.
  • Store dark and dry to protect the ASTA figure.
  • Check the colour on arrival rather than at first use; ASTA falls with storage time.
