Short, thick-walled pods with a wide heat window, sold stem or stem-less
Chaotian jalapeno chile is one of the most popular chili peppers in the world, loved for its flavour and for a level of heat that is not too scorching but playfully hot. In China the same pod is known as Tianying or Chaotian chili.
Pods run 3 to 5 cm or 3 to 7 cm depending on the grade, with broken content held below 3 percent and loose seeds below 2 percent. Heat is quoted across 4,000 to 20,000 SHU, which is a deliberately wide window because the variety is used both as a mild table pepper and as a hot sauce base.
Key Benefits
A heat range you can position within
4,000 to 20,000 SHU covers a mild retail pack and a hot sauce base from one variety, so a product family can be built without changing pod.
Clean grading
Broken pods below 3 percent and loose seeds below 2 percent, which matters when the pod is going into a transparent retail pack.
Two length grades
3 to 5 cm and 3 to 7 cm, so a pack can be filled to look uniform rather than sorted at your end.
Stem or stem-less as ordered
Stem-on sells better at retail; stem-less runs better through a mill.

Where This Product Ends Up
Hot sauce and chili oil
Thick walls give body when the pod is cooked down.
Retail whole-pod packs
Short uniform pods with low broken content photograph well.
Dry seasoning bases
Ground to powder where a noticeable heat step is wanted.
Pickling and table condiment
Held whole in brine or oil.
Who It Is For
- Hot sauce producers building a medium-to-hot line.
- Retail packers selling whole dried chili in a window pack.
- Blenders who need a hotter pod than Beijing Red without going to cayenne.
Problems It Solves
Broken pods spoil a retail pack
Broken content is graded below 3 percent and loose seeds below 2 percent.
One heat level does not cover a product family
A 4,000 to 20,000 SHU window means mild and hot variants can share a supplier.
Length varies wildly in mixed lots
Two length grades are offered rather than one unsorted pile.
From the Field to Your Container
Variety agreed before planting
Puya, Chaotian, Yunnan cayenne and Jinta behave differently in the field and in the dryer. The variety is fixed with the grower before the season, because it is the variety that sets the colour and heat bands you can be quoted.
Picked ripe and sun dried
Pods are picked red and ripe and sun dried in the yard at Changyi. Sun drying is the step that decides the ASTA colour of the pod and of everything milled from it later.
Graded for length, broken and loose seed
Whole pods are sorted to a published length minimum and checked for broken content and loose seed before they are considered sellable as a whole grade.
Stored cold, then packed to your discharge method
Frozen and constant-temperature storage totals 4,800 cubic metres. Pods ship in woven sacks for millers, cartons for hand tipping, or retail-ready packs.
Quality Control and Certification
- Whole pods are graded by hand as well as mechanically, because broken content and loose seed are what a buyer actually pays for twice.
- Broken pods are graded to below 3%.
- Loose seed is graded to below 2%.
- Colour is confirmed inside the quoted 60-180 ASTA band against your agreed target point.
- No food quality or safety incident has occurred since the company began processing in 1999, and more than 90 percent of output has been exported throughout that period.
Use Guide
- Keep the pack sealed; short pods pick up moisture faster than long thin ones.
- Remove seeds before grinding if you want to pull the heat down.
- Toast lightly before use in oil-based sauces.
- Check the heat grade on each lot before scaling a recipe from sample to production.
How This Compares With the Rest of the Range
| Alternative | What changes |
|---|---|
| Puya Chili Beijing Red Pepper | Milder at 2,000 to 4,500 SHU and a longer pod. Choose Beijing Red for volume colour work. |
| Yunnan Chili Cayenne | Hotter and much longer at 8 cm and up. Choose cayenne when you want heat with a slim pod. |
| Premium Chili Powder | The milled equivalent when you do not want to grind in house. |

Questions About Jalapeno Chile Chaotian Chili
Is Chaotian the same as a Mexican jalapeno?
It is the Chinese pod sold under the jalapeno chile description. Locally it is called Tianying or Chaotian chili. Tell us the SHU band you are buying against and we will match it rather than relying on the name.
Why is the heat range so wide?
Because the variety is used for both mild and hot products. Lots are selected within the band for each order, not shipped as a blend of the whole range.
Can I get pods with stems removed?
Yes. Both stem and stem-less are standard.
What is the broken pod tolerance?
Below 3 percent, with loose seeds below 2 percent.
Is an MSDS available?
Yes, for Chaotian chili powder. It downloads from the Downloads page.
