Why is chili thread more expensive per kilo than crushed chili?
Because you are buying appearance as well as chili. Only pods pliable enough to bend rather than shatter can be cut into thread, and the cutting step is slower than milling.
Which thickness should I order?
0.4 mm gives the finest garnish look. 0.8 mm survives being folded into a wet product such as a kimchi paste without breaking up.
Do threads need to be rehydrated before use?
Not necessarily. They can be used as they are, toasted for about a minute in a dry pan, or soaked for 10 to 15 minutes in warm water.
Will they arrive as thread or as dust?
They are packed to protect the cut. Over-compressed packing is the usual reason thread arrives as flake, so we do not compress it.
What pod are the threads cut from?
