This is where most of our volume goes. Four products covering powder at 40 to 120 mesh, crushed flake at 40 to 60 mesh, a coarse 3 to 5 mm crush with specified seed content, and a 2 mm ring cut.

Can one order cover more than one mesh?
Yes. Powder runs at 40, 60, 80, 100 or 120 mesh and the mill is set per lot, so a mixed load of two mesh sizes is a scheduling question rather than a problem.
How do I decide between crushed chili and crushed chili with seeds?
Plain crushed at 40 to 60 mesh gives an even flake. The seeded grade is a coarser 3 to 5 mm cut with seed content fixed at 25, 30 or 40 percent, which changes both the texture and the apparent colour.
Why do the ground grades have such wide heat ranges?
Because they are blended. The published 100 to 80,000 SHU on crushed chili describes what can be made; your order buys one point inside it, stated on the contract.
What moisture should I expect?
Below 10 percent on powder and on crushed chili with seeds, 14 percent maximum on plain crushed chili and sweet paprika crushed, and 16 percent maximum on chili rings.
