The Beijing Red chili, also called Yidu chili, is a hot red chili pepper used to flavour dishes, chili sauce, kimchi and other products. It is a cultivar of Capsicum annuum related to bell peppers, and it is the pod most of our ground and cut products start from.

At 2,000 to 4,500 SHU it sits low enough to be used generously, which is why it ends up as the base of a blend rather than as the heat source in one. Pods run 7 cm and up, and colour is quoted across 60 to 180 ASTA.

Manufacturing Process

From the Field to Your Container

  1. Variety agreed before planting

    Puya, Chaotian, Yunnan cayenne and Jinta behave differently in the field and in the dryer. The variety is fixed with the grower before the season, because it is the variety that sets the colour and heat bands you can be quoted.

  2. Picked ripe and sun dried

    Pods are picked red and ripe and sun dried in the yard at Changyi. Sun drying is the step that decides the ASTA colour of the pod and of everything milled from it later.

  3. Graded for length, broken and loose seed

    Whole pods are sorted to a published length minimum and checked for broken content and loose seed before they are considered sellable as a whole grade.

  4. Stored cold, then packed to your discharge method

    Frozen and constant-temperature storage totals 4,800 cubic metres. Pods ship in woven sacks for millers, cartons for hand tipping, or retail-ready packs.

Quality Control and Certification

  • Whole pods are graded by hand as well as mechanically, because broken content and loose seed are what a buyer actually pays for twice.
  • Colour is confirmed inside the quoted 60-180 ASTA band against your agreed target point.
  • Pods from our own Xinjiang plantation carry residues that comply with the Japanese Positive List System, which is the list that decides whether a whole-pod lot can enter Japan at all.
  • Graded under a HACCP system certificate issued by the China Quality Certification Centre.
  • No food quality or safety incident has occurred since the company began processing in 1999, and more than 90 percent of output has been exported throughout that period.

How quality is controlled

Use Guide

  • Store dry and out of direct light; colour is the first thing to fade.
  • Rehydrate in warm water before wet milling for sauce work.
  • Toast briefly in a dry pan to lift the aroma before grinding.
  • Grind in short bursts to keep the mill from heating the oil out of the pod.

Questions About Puya Chili Beijing Red Pepper

Is Beijing Red the same as Yidu chili?

Yes. The old and the newer name refer to the same pod, and both appear on our paperwork. Puya is the name it is usually sold under in Mexico and the United States.

How hot is it compared with a jalapeno?

It is milder. Beijing Red runs 2,000 to 4,500 SHU; our Chaotian jalapeno-type pod runs 4,000 to 20,000 SHU.

What length can I expect?

Pods are graded at 7 cm and up. If you need a tighter length band for a retail pack, say so at quotation.

Can you supply it stem-less?

Yes, stem and stem-less are both normal for us.
