Farm to Fork Traceability
Traceability is what connects the carton in a cold store back to the pond the fish came from. Ours works because we own most of the chain rather than buying finished fish.
What Happens at Each Stage
Each stage names the problem buyers actually run into and what we do about it.
Farming
Problem — Fish bought on the open market carries no usable history.
We operate 1,000 acre self owned fish farms registered with China Customs, rearing seabass, barramundi, red drum fish and tilapia, with additional live fish from audited partner farms.
Live Haul
Problem — Long transport degrades raw material before it is frozen.
Live fish are transported from farm to plant within 10 to 30 hours, and from the nearest Baijiao farms in minutes.
Processing
Problem — Records break when processing is outsourced.
Whole round, gilled gutted and scaled, marinated and flower cut forms are produced in our own plant with an annual production capacity of 50,000 metric tons.
Freezing
Problem — Slow freezing damages cell structure and destroys texture.
Liquid nitrogen freezing reaches -196 C and completes in 5 to 30 minutes, forming evenly distributed fine crystals that protect texture, colour and flavour on thawing.
Cold Storage
Problem — Inventory gaps break an export programme.
Cold storage capacity of 4,000 metric tons supports stable inventory and on time export supply.
Testing and Release
Problem — Without testing, traceability is only paperwork.
Routine testing includes microbiological analysis and veterinary drug residue testing before release.
