What Red Tilapia Is
Red tilapia, also called rainbow tilapia, is a hybrid resulting from crossbreeding Nile tilapia and Mozambique tilapia. The hybrid varies by region and breed. Its most notable feature is a vibrant colour ranging from pink and red through light pink and orange red to golden yellow, in contrast to the relatively uniform grey or olive green of regular tilapia.
Body Shape and Strains
Red tilapia is laterally compressed with a smaller mouth and a lower jaw that extends slightly beyond the upper jaw. The dorsal fin is long, the pectoral fins are short and do not reach the anus, and the caudal fin is round and not forked. The main strains are the Nile tilapia type, the Okinawa tilapia type and the Mozambique tilapia type. Compared with regular tilapia it is more compact with a smaller head, higher back and thicker body.
Colour Growth Rate and Resistance
Market value varies with colour. Pink coloured fish grow fastest, followed by orange red, while golden yellow grows slowest. Colour also tracks disease resistance in the opposite direction: pink fish show a lower survival rate and weaker resistance, orange red fish sit in the middle, and golden yellow fish show the highest survival rates, particularly through overwintering.
Why the Colour Matters Commercially
The striking colour is what adds value at retail. A red skinned whole fish stands out on a frozen or fresh counter in a way that grey skinned nile tilapia does not, which is why red tilapia commands a higher whole fish price while nile tilapia dominates the fillet commodity trade.
