This is the portioned fillet programme built on the same Lateolabrax japonicus raw material as our whole fish line. Fillets are cut belly off with the pin bone removed, trimmed to a consistent shape and individually quick frozen, so the buyer receives a pack where every piece falls inside the ordered weight band. Zhuhai's brackish water aquaculture environment supplies over 80% of China's premium seabass, which is why we can hold fillet grading through the year instead of only during a harvest peak.
