Channel catfish is farm raised in controlled freshwater systems and processed into five cuts on the same line as our other freshwater species. It is a mild, flaky and tender fish that takes frying, grilling, baking and steaming equally well, which is why it works as a value tier whitefish in both Western and Asian menus without needing a strong sauce to carry it.
