Some products are safer treated in the pack than before it. Once a can, pouch or bottle is sealed there is no recontamination risk from the filler onwards, so the heat goes through the container instead. This small category covers retorts, which hold sealed packs under pressure at sterilising conditions, and pasteurisation and cooling tunnels, which carry sealed packs through a heating and cooling profile on a conveyor. Selection depends on the container, the pack format and how many packs per hour the line produces.
