Water is expensive to ship and awkward to store. An evaporator takes it out under vacuum, so the product boils at a lower temperature and keeps more of its colour and flavour than open boiling would allow. The result is a concentrate that occupies a fraction of the volume and lasts longer in store. This is a single machine category built around one duty: concentrating juice and similar liquid foods.
