Fresh cobs: cold, fast, and short

Fresh sweet corn is a short-life product by nature, because the sugar-to-starch conversion that starts at cutting does not stop while the ear is fresh. Cold slows it; nothing halts it. Ears are graded and pre-cooled in season, and everything after that is a race. This is why fresh is a short-haul and air-freight format rather than a sea-freight one.

IQF: −18°C, up to 12 months, unbroken

Frozen product carries up to 12 months of frozen shelf life when held at −18°C through an unbroken cold chain. The word doing the work there is unbroken. Each excursion above −18°C partially thaws surface moisture which then refreezes — the mechanism behind ice glaze, clumping and the slow loss of texture that fast freezing was meant to prevent.

Vacuum-pack: ambient, stated on the pack

Cooked, vacuum-sealed cobs are held at ambient temperature, with storage conditions and shelf life stated on the pack and set per production run and destination market. Ambient removes the cold-chain failure modes entirely; what replaces them is pack integrity, since the seal is what the shelf life depends on.

What to check on receipt

For frozen deliveries, record the arrival temperature before the pallet moves and check for clumping and ice glaze before it goes into store — both point to excursions in transit. For ambient packs, check seal integrity and pack condition. For fresh, check the cold chain and handle it as the short-life produce it is.

Can frozen corn be refrozen after thawing?

Refreezing thawed product is how texture is destroyed — the second freeze is slow, forms large crystals and ruptures whatever the first freeze protected. It is also a food safety question governed by your own market's rules.
