A fresh cob is judged in the hand, not on paper. The grade has to be visible — even ear length, tight kernel rows filled to the tip, husk still green and closed — because that is what a produce buyer checks at intake and what a shopper checks on the shelf.
Fresh sweet corn goes wrong in two ways that a spec sheet rarely captures. Ears arrive uneven, because they were collected across several growers with different planting dates. Or they arrive sweet on paper and dull in the mouth, because too many hours passed between the stalk and the cold room.
Both are handled by growing the crop rather than buying it. Planting is scheduled on our own land, ears are cut at the green-ear stage, and grading happens against a single variety profile before the corn is pre-cooled. What ships is one uniform batch with one harvest date, not a blend.

Ears are selected before packing so each shipment meets a consistent specification rather than an average of what the day produced.
Cut ears move into pre-cooling in season instead of standing in a collection yard, which is where fresh sweetness is usually lost.
In-husk ears protect the kernels and read as "just picked" on a produce shelf; husked cobs show the pearl-white kernels the variety is bought for. Both come from the same grade.
