
The green-ear window: why harvest timing decides sweetness
Sweet corn is unusually unforgiving about when it is cut. The window where sugar and tenderness are both at their peak is narrow, and everything downstream inherits the decision made in it.
What the green-ear stage is
It is the stage where the kernel is filled and tender but has not begun to accumulate storage starch — the point corn is picked for eating rather than for grain. Cut early, the ear is underfilled and watery. Cut late, sugar has already begun converting and the texture has turned firm. The window is measured in days, not weeks.
Why the clock does not stop at harvest
Once the ear is cut, conversion continues. Sugar becomes starch, and sweetness measured at the field is not the sweetness that arrives days later. This is the reason speed matters in every account of good sweet corn handling — same-day pre-cooling for fresh, and flash-freezing within hours for IQF. The freeze does not improve the corn; it stops it changing.
