The three formats are the same corn handled three ways. Choosing between them is not a quality decision — it is a decision about your cold chain, your channel and your calendar.

Start from the cold chain you actually have

This eliminates options faster than anything else. If there is no freezer at the store or the customer, frozen is not a candidate however good it is. If there is a freezer and you need product in month nine, fresh is not a candidate. Most format debates resolve themselves once this question is answered honestly.

Then look at the calendar

Fresh cobs run in the harvest window and are graded and pre-cooled for short-haul and air freight. IQF, held at −18°C with up to 12 months frozen shelf life, covers the rest of the year. Vacuum-pack is not season-bound either and needs no freezer at any point, which is why it tends to anchor ambient listings.

What each format does to the eating experience

Fresh is the variety at its most direct — raw-edible, crisp, the pitch the whole range is built on. IQF stays closest to that texture, because freezing at −35 to −40°C keeps ice crystals under 100 microns and leaves cell walls intact. Vacuum-pack cobs are cooked before sealing, so they trade raw-crisp character for ambient convenience and a heat-and-serve pack.

Running more than one

The formats complement each other more often than they compete. A frozen bag serves cooking occasions; an ambient cob serves convenience occasions; a seasonal fresh promotion gives the range a story at the moment the crop is at its best. All three trace to the same variety and the same fields, so a multi-format range stays coherent.
