Kernels are the format that gets used, not admired. They go into a mix, a sauce, a ready meal, a salad bar — which means the only questions that matter are whether they pour freely, whether they hold their shape after heat, and whether they release water into whatever they are cooked with.
Slow-frozen kernels fail all three. Large ice crystals rupture the cell walls during freezing, so thawing releases the cell contents: the kernel goes limp, the dish goes watery, and the colour dulls. Blocks of kernels frozen together also force you to thaw more than you need.
Freezing at −35 to −40°C in moving air forms countless ice nuclei under 100 microns instead of a few large crystals. Cell walls survive, so the kernel keeps its bite and holds its juice. Each kernel is frozen individually, so the pack pours.

Individually frozen kernels stay separate in the bag. You draw the exact weight the batch needs and return the rest to the freezer without a thaw-refreeze cycle.
Because the cells were not ruptured on the way in, kernels come through cooking with their shape and pearl-white colour rather than collapsing.
Most IQF kernel corn is a field-type variety chosen for yield. These kernels come from Pearl White at 18–24° Brix with low crude starch, which shows up as clean sweetness rather than starchy bulk.
The same frozen lot fills catering cartons and printed consumer bags, so a retail line and a food-service line stay consistent with each other.
