What is fruit corn, and how is it different from sweet corn?

"Fruit corn" is not a marketing flourish. It describes corn that can be eaten the way fruit is eaten — raw, off the cob, for its juice and sweetness — and that requires a specific set of traits rather than a claim on a label.

Three corns, three purposes

Field corn is bred for yield and dry matter; it is starchy and destined for feed, starch and oil. Standard sweet corn is bred to be cooked — sweeter than field corn, but with a pericarp firm enough that raw eating is unpleasant. Super-sweet fruit corn sits at the far end: bred for eating quality first, with sugar high enough and skin thin enough that cooking becomes optional.

The two traits that actually decide it

Sugar content and pericarp thickness. Sugar gives the sweetness; the pericarp — the transparent skin around each kernel — decides whether that sweetness arrives cleanly or behind a chewy hull. A corn can be very sweet and still eat badly raw if the skin does not break under the teeth. Both traits have to be bred in together, which is why fruit corn varieties are relatively few.

What that looks like in a real variety

Pearl White (Shengtian Baizhu), the white super-sweet variety Yuyuan grows, carries 18–24° Brix with water-soluble total sugar up to 34.95%, and a pericarp residue rate as low as 4.08% — the measure of how much skin is left behind after chewing. It scores 85 / 100 in standardized taste evaluation. Crude starch is low, which is why the flavour reads as clean rather than floury.

Why it matters commercially

A buyer selling fruit corn is selling an eating experience, which survives into the frozen and ambient formats made from it. A buyer selling commodity corn is selling a price. The two compete in different places on the shelf, and the variety is what decides which conversation you are having.

Can you eat any sweet corn raw?

You can, but most of it is unrewarding — the skin stays behind as hull and the sugar is lower. Raw eating is comfortable when the pericarp is thin and the sugar is high, which is what fruit corn varieties are selected for.

Does fruit corn have to be white?

No. White is a colour trait, not a category requirement. Pearl White happens to be both — a white super-sweet variety with pearl-white kernels on a white cob.
