Why Cut Style Is a Cost Decision
The cut style you order decides how much handling the product needs after it arrives. A pizza plant that buys whole mushrooms pays twice: once for the can, and again for the labour of slicing it. A delicatessen that buys sliced mushroom cannot present it whole in a jar. Cut style is set at the factory, so it is worth deciding before the order rather than after the first delivery.
Whole
Whole caps are used where the mushroom is meant to be seen. Marinated whole champignon in an oval jar, whole straw mushrooms in an Asian grocery range, whole king oyster or bailing mushrooms where size itself is the selling point. Whole packs carry the highest visual expectation, so grading matters more than in any other style.
Sliced
Slices are the workhorse for manufacturing. They go from tin to pizza base, sauce or ready meal without a second handling step, and the drained weight per tin is predictable enough to build a recipe cost around. Champignon, oyster, abalone and shiitake are all available sliced or cut.
Pieces and Stems
Pieces and stems is the value style. It is used in soups, sauces and fillings where the mushroom contributes flavour and texture but is not presented as a whole item. On champignon this is a standard export style and it lets a buyer carry a lower price point without changing supplier.
Strip and Cut
Strip and cut styles sit between sliced and whole. Oyster, abalone and shiitake mushrooms are available in these styles, which suit stir-fry components and mixed vegetable packs where a longer piece holds its shape better than a slice.
Matching Style to Format
Cut style and pack format usually travel together. Bulk catering tins at 2840G are normally sliced or pieces and stems. Retail tins at 284G to 400G run whole or sliced. Glass jars at 330ML to 720ML are most often whole or marinated, because the product is visible through the glass.
