Freezing speed is a quality variable, not just a throughput one. Product frozen slowly grows large ice crystals that rupture cell walls; the damage shows up as drip loss and soft texture at thaw, long after the freezing decision was made.

How blast tunnels work

Blast freezing tunnels freeze food rapidly at minus 70 to minus 80 degrees Celsius. High-velocity cold air moves heat out of the product far faster than a static freezer room, which keeps ice crystals small and preserves cell structure, texture and flavour.

  • Dairy — ice cream and frozen desserts
  • Seafood — shrimp and fish fillets
  • Bakery — pastries and dough

Each of these has a different reason for choosing blast freezing. Ice cream needs the fine crystal structure for mouthfeel. Shrimp and fillets need it to hold water at thaw. Dough needs it to keep yeast viability and structure intact.

Blast tunnel or IQF freezer?

A blast tunnel freezes product in batches, typically on trolleys or racks. An IQF system freezes individual pieces continuously on a belt. Loose, uniform products suit IQF; boxed, packed or irregular product is usually blast frozen.

Sizing against the line

The tunnel has to clear product at the rate the line produces it. Undersized freezing capacity does not simply slow the plant — it leaves product waiting at ambient, which is where the quality loss actually happens. Size the freezer against peak hourly output, not the annual average.
