What the Thread Pitch Actually Does
A screw thread has to cut and hold in whatever it goes into. Timber is soft and fibrous, so it needs a deep aggressive thread with wide spacing that can bite into the fibres and pull the board tight. Light gauge steel is thin and hard, so it needs a shallow closely spaced thread that forms in the metal without stripping it. That is the whole difference between a coarse thread and a fine thread drywall screw, and it is why one substituted for the other either strips the board or stalls in the stud.
Coarse Thread for Timber Framing
Use the coarse thread drywall screw where the framing is timber. The wide pitch pulls the plasterboard against the stud quickly and holds it there while the joint compound goes on. Fine Thread for Steel Studs

Past a certain gauge a plain point will not start in steel at all.
